Taco Soup Recipe

I realized today that I forgot to post the Taco Soup recipe that I mentioned last week. It is one of the easiest soups I’ve ever made, and one of our new favorites.
Taco Soup

1 Can Swanson 99% Fat Free Chicken Broth
3 Cans Great Northern Beans
2 Cans Diced Tomatoes
1 Can Mexican Corn (I often substitute 1/2 bag frozen corn)
1 Packet Taco Seasoning Mix
1 Packet Fat Free Ranch Dressing or Dip Mix
Onions to taste

Mix all ingredients in a large pot and bring to boil. Turn down heat, and simmer for an hour and a half.

As an added bonus, one cup of this soup is only one Weight Watcher’s point (definitely a plus for my weight loss goal for this year!). In addition, whether you find the ingredients on sale or pick up your local store brand, the soup costs just over $5 to make.

This is very similar to a taco soup I make, but we use one can each of black, kidney and pinto beans. It's a great variety. I also use only one can of tomatoes (stewed for us) and I blend them first for the kiddos. We also add one pound of browned ground beef. I make it in the crockpot where I just dump in everything and let it sit and warm up all day, however, I always make at least a double batch as we all LOVE it and it also freezes well. We usually serve ours with shredded cheddar, sour cream, and tortilla chips. It's one of our favorites year round!

That variation sounds great! I might try changing it around a little the next time I make it.
