
We stayed very close to our planned meals for last week…..with the exception of the coconut chicken. For starters, I still hadn’t tracked down a recipe that I was crazy about, and then the B1G1 Free Chipotle coupons came out. It clearly seemed like a sign that the coconut chicken should be bumped to this week’s menu, and burritos from Chipotle should fill in the missing spot! We are all HUGE fans of Chipotle, but without a coupon, it’s not very budget-friendly meal for a family of six!
We are trying a few new recipes this week, as it’s been awhile since we’ve ventured out of our comfort zone. Here’s what’s on our menu plan:
Monday – Pizza at Fernside
Tuesday – Chicken parmesan, pasta, green beans
Wednesday – Scrambled eggs, oatmeal casserole, quick bread, fresh fruit
Thursday - Italian pasta florentine, Italian bread, apple slices
Friday - Sausage & potatoes, salad, Italian bread
Saturday – Coconut chicken fingers, potato wedges, corn
Sunday – Pasta bake, rolls, fresh fruit
