I have definitely been remiss in planning out meals for our family over the past several weeks. Between finalizing our school year, planning a graduation party for our oldest son, and running back and forth for baseball games, dance classes, and a spring recital, the last two months have passed by in a blur.
Our whole family is relieved that summer has finally arrived, and that our days have slowed down into a relaxed pace. I’m looking forward to trying new recipes, grilling out, and cooking s’mores over the fire pit.
I’ll be sharing several new recipes this week and next week that we’ve tried recently and have come to love. Here’s our menu plan for this week:
Monday – cheeseburgers, fruit salad, corn on the cob, s’mores
Tuesday – garlic chicken & pasta, baguettes, salad
Wednesday – cheese danish, waffles, sausage, fresh fruit
Thursday – quesadilla casserole, rice with cilantro, corn
Friday – spaghetti & meatballs, garlic bread, salad
Saturday – chicken & rice bowls, salad, baguettes
Sunday – autumn sausage casserole, salad, fresh fruit
I also intend to plan out several freezer cooking days throughout the month of June, so I’ll be sure to post updates and recipes as those plans unfold.

I could be really lazy and just use your menu plans! =0) Our families have similar taste so its would be easy. I did steal some of these to put on next weeks menu. Thank you! Now about laundry….
I wish I could come up with a good system for the laundry. Between baseball uniforms and outfit changes for our 5 year old who thinks she needs to change three times a day….I feel like I’m never caught up! It is one of my goals for the summer, so if I come up with a great system, I’ll be sure to share
