This Week’s Menu Plan

Now that warmer temperatures have returned, I’m on the lookout for new grilling recipes.  If you have any family favorites, I’d love it if you would share your recipe!

Here’s what we have planned for this week:

Monday – teriyaki grilled chicken, salad, fresh fruit

TuesdayChipotle night for Educators’ Appreciation Day (yum!)

Wednesday - grilled sirloin burgers, cantaloupe, steamed veggies

Thursday – dinner out since I’ll be out of town for the day

Fridayturkey chili, raw vegetables, fresh fruit

Saturdaycilantro lime chicken tacos, raw vegetables, fresh fruit

Sundaygrilled lime coconut chicken, steamed broccoli, fresh fruit

This is our favorite way to eat grilled pork chops. I got this recipe from Taste of Home and adapted it just a bit. Please note that this is supposed to be for 2 pork chops (6 ounces each) so you will have to double/triple accordingly. I actually make this up in large batches and keep it in an old spice container – we like it that much.
1 tsp salt-free garlic seasoning blend (Mrs. Dash)
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp minced fresh parsley
1/4 dried rosemary, crushed

Combine spices, brush your pork chops with olive oil, then season liberally with the mixture. Grill until done.
