Our Weekly Menu Plan

I had such good intentions of posting our menu plan early on in the week….after all, I even had it all written out and a nice little grocery list running alongside it.  But somehow, doctors’ appointments, school schedules, laundry, and errands pushed this post a little further back in my “to do” list than I had anticipated!

One of our family’s new favorite meals made it onto this week’s listing….stuffed green peppers.  I tweaked a recipe I found online to make it a healthier dinner option.  I’ll be sure to share the recipe at some point next week.

Another family favorite on this week’s plan is the pesto chicken.  It’s arguably one of the easiest and most inexpensive meals I make.  I use Aldi’s pesto sauce which is the best jarred pesto I’ve tried, and at just $1.69 for the jar, it’s economical as well!  I simply spread the pesto over the chicken, add a sprinkle of mozzarella cheese, and it makes a meal that’s simple and delicious.

Here’s the rest of our menu plan for this week:

Monday – black bean and ground turkey tacos, veggies and hummus, fresh fruit

Tuesday – grilled cheese and soup, fresh fruit

Wednesdayturkey burgers, spinach salad, strawberries

Thursday – pesto chicken, wild rice, grilled zucchini and squash

Friday – dinner at Kings Island

Saturday – stuffed peppers, fresh fruit

Sunday – to be determined 🙂
