Our Weekly Menu Plan

It’s birthday week at our house!  Both my husband and our second oldest son will be celebrating their birthdays this week with specially requested meals and of course, cake!

I’m also trying something a bit different this week.  For Tuesday’s menu plan, I actually have two different meals  planned – barbecue chicken chef salad and chicken bake.

In actuality, I’m only cooking up one bag of chicken, but in two separate pans – one with barbecue sauce and one without.  This makes it super easy to make a meal that the kids love as well as one that is more calorie-friendly for those of us who can’t eat anything we want without gaining an ounce!

So, here’s our menu plan for this week:

Monday – fish tacos, cucumber and tomato salsa, rice

Tuesday – barbecue chicken chef salad or chicken bake

Wednesday – beef stroganoff, homemade biscuits, fresh fruit

Thursdaybalsamic glazed pork chops, quinoa, grilled zucchini

Friday – leftovers

Saturdaywhite chicken chili, homemade rolls, fresh fruit

Sunday – dinner out for multiple birthdays!
