Our Weekly Menu Plan

It’s birthday week at our house!  Both my husband and our second oldest son will be celebrating their birthdays this week with specially requested meals and of course, cake!

I’m also trying something a bit different this week.  For Tuesday’s menu plan, I actually have two different meals  planned – barbecue chicken chef salad and chicken bake.

In actuality, I’m only cooking up one bag of chicken, but in two separate pans – one with barbecue sauce and one without.  This makes it super easy to make a meal that the kids love as well as one that is more calorie-friendly for those of us who can’t eat anything we want without gaining an ounce!

So, here’s our menu plan for this week:

Monday – fish tacos, cucumber and tomato salsa, rice

Tuesday – barbecue chicken chef salad or chicken bake

Wednesday – beef stroganoff, homemade biscuits, fresh fruit

Thursdaybalsamic glazed pork chops, quinoa, grilled zucchini

Friday – leftovers

Saturdaywhite chicken chili, homemade rolls, fresh fruit

Sunday – dinner out for multiple birthdays!

Our Weekly Menu Plan

Now that the school year is winding down to a close, I’m looking forward to evening grill outs, days spent at Kings Island, and a more simplified daily routine.  During the summer months, I plan to try out a variety of new recipes so that I can expand our family’s “favorites” list (not that I don’t love making the same ten recipes over and over again..!).  So, if you have any favorite recipes or meal planning sites, be sure to send them my way!  🙂

Here’s our menu plan for this week:

Mondayturkey burgers, spinach salad, watermelon

Tuesdaysouthwest chicken stacks, tortilla chips, grapes

Wednesday – buffalo chicken, raw veggies and hummus, cantaloupe

Thursday – dinner at Kings Island

Fridaywhite chicken chili, spinach salad

Saturday – grill out at my sister’s house (I’m bringing fruit)

Sunday – barbecue pork chops, corn on the cob, watermelon, chips


Our Weekly Menu Plan

So confession time here….I’ve seriously strayed away from menu planning and my power grocery shopping trips.  Most days, it’s more likely that I run into a store for the few items we need for dinner that evening than anything close to a comprehensive grocery run.

Now don’t get me wrong….I still hunt out great coupon deals and score bargains when I’m at the store.  It’s just that trying to coordinate a large scale shopping trip that resembles any realistic type of organization is just harder to do these days.

It seems that our family’s life has entered a whole new realm of chaos unbeknownst to us before.  With our oldest son in college, our second oldest in high school, and our two youngest still being homeschooled, there are a lot of schedules to juggle.  Add in my husband’s work schedule, my work schedule, doctors’ appointments, and kids’ activities and well….it’s no wonder that grilled cheese and soup ends up on the dinner table more often than the kids would care for it to!

The good news is that the school year is finally coming full circle.  Summer is drawing near.  And the chaos is promising to slow down to a dull roar.  With all of this in mind, it seems almost possible to resume menu planning, purposeful grocery shopping trips, and perhaps a renewed sense of sanity!

Luckily, this week’s menu plan is an easy one for me.  Between Teacher Appreciation Day at Chipotle (bless you, Chipotle!), a family gathering, a graduation party, a dance recital celebration, and dinner out at Kings Island, I have very little time scheduled in the kitchen this week.  The timing is a blessing for me, as this week promises to be a hectic one for our family.

Here’s what we have planned for this week’s menu:

Mondayturkey chili, spinach salad, cantaloupe

Tuesday – Teacher Appreciation Day at Chipotle

Wednesday – family dinner hosted by my mom

Thursdaysouthwest chicken stacks, cilantro lime rice, fresh fruit

Friday – dinner out for recital celebration (Friday’s Endless Apps looks to be the clear winner here!)

Saturday – dinner at Kings Island (love their meal plan!)

Our Weekly Menu Plan

This week has more than its fair share of celebrations for our family.  In addition to Valentine’s Day on Tuesday, our youngest son celebrates his birthday on Wednesday as well…both of which account for a few “less than healthy” food options on our menu plan.

As a tradition, I typically make homemade heart-shaped pizzas for Valentine’s Day.  However, as luck would have it, our household is split 50-50 between healthy people and sick people right now, so homemade crust was really not happening this evening.

Instead, I tried out Pillsbury’s refrigerated pizza dough as a quick option to save our pizza tradition.  It certainly wasn’t homemade, but the kids enjoyed the pizzas nonetheless.  And it gives me an excuse to make pizza again in the near future!

Since both of our older sons have school tomorrow, I’m planning a homemade meal of calzones for our youngest son’s birthday.  We’ll celebrate by going out to dinner on Sunday since all of us are off work that day (a near miracle for our family these days!).

The meals for the rest of the week are fairly simple and definitely healthy in order to combat the effects of pizza and calzones.  Unlike my kids, I don’t possess the superpower of eating whatever I want without gaining weight!  Instead, I simply smell a chocolate chip cookie and gain two pounds…it seems somewhat unfair! 🙂

So, here’s our men plan for this week:

Monday – honey teriyaki chicken, grilled peppers and onions, spinach salad

Tuesdayhomemade pizza, garlic bread, candy (I mean it is Valentine’s Day)

Wednesdaycalzones, garlic bread, cookies with ice cream (per the birthday boy’s request!)

Friday – apple barbecue pork chops, quinoa, grilled veggies

Our Weekly Menu Plan

Okay….confession time here…..I really ignored my diet during the past four weeks.  Like I pretty much slammed the door on healthy foods, and opened the flood gates to cookies, coffee cake, candy, and a jumbled assortment of holiday delicacies.  cookies-2

You see, I come from a family with a long tradition of making Christmas cookies.  And I’m not talking about just a few batches here.  No, in fact, my assortment of cookies pales in comparison to the spread my mother used to make every holiday season when I was growing up.  So, it’s not exactly easy for me to choose a salad or carrots over a cookie….I just really don’t have quite that much willpower!


Honestly, the most green thing I’ve eaten in the past two weeks are my green tree cookies.  Yep….proud moment for me here!  So, needless to say, I am more than ready to refocus my energies on healthy eating choices, which means I’ll be redoubling my efforts to menu plan and stock our house with foods high in protein, veggies (not green trees!), fruit, and whole grains.

Since yesterday was the last day of Christmas break for my youngest three, we decided to cap off the break with dinner at Buffalo Wild Wings.  It was a fun farewell to our break, as well as a farewell to all those foods that I shall henceforth be avoiding!  Instead, I’ll be reacquainting myself with spinach, bell peppers, lean chicken, and all of their friends!

So, here’s our family’s menu plan for this week:

Monday – Christmas break farewell at BDubs

Tuesday – turkey tacos, refried beans, raw veggies

Wednesday – lemon rosemary chicken, broccoli, long grain rice

Thursday – chicken fajitas, steamed veggies, quinoa

Friday – salad bar (chicken, avocados, turkey bacon, hard boiled eggs, spinach, and the like)

Saturday – leftovers

Sunday – white turkey chili, spinach salad

So, it looks like I’ll only be cooking three times this week, and I’m not gonna lie….I’m pretty excited about that!  It’s going to be a crazy busy week for our family with a Confirmation meeting, soccer games, our daughter’s recital, a Reds Game, and Mother’s Day, so it’s ideal timing for an easy cooking week!

Here’s what we have planned for our menu:

Monday – teriyaki chicken, rice, and veggie bowls

Tuesday – Chipotle for Teacher Appreciation Day

Wednesday – lemon chicken, flatbreads, spinach salad

Thursday – taco night for Cinco de Mayo!

Friday – dinner at Kings Island (still lovin’ that meal pass!)

Saturday – dinner at the Reds Game

Sunday – surprise dinner being made by my husband and kids 🙂


Our Weekly Menu Plan

I’ve hit that point of the year where I’m completely burnt out with menu planning.  I’m tapped out of ideas for dinners, and I’m pretty sure that my family is more than bored with marinated chicken, turkey burgers, and tacos.

So, I’m avidly searching for new ideas, healthy recipes, and summer-themed meals.  I’m afraid that if I serve marinated chicken one more time this month, I may have a mutiny on my hands!

However, I am loving the fact that we have meal passes along with our Kings Island passes this year.  It’s a guaranteed “no cook” night at least once a week!  As for the rest of the meals, I’ll be scrolling through Pinterest, flipping through magazines, and consulting my cookbooks for new ideas.

Here’s what I have planned for this week:

Tuesday – baked ziti, spinach salad, breadsticks

Wednesday – leftovers
